The Calabrian cuisine is based on simple combinations and intense and genuine tastes such as onions and the famous ‘nduja’, a soft very spicy salami. The food represents a taste of the local farming community traditions which saw the women’s reign in the kitchen in a patriarchal family structure following the rhythms of the seasons in the fields.
